Anchovy Sauce Recipe

To 1 pint basic white sauce add

2-3 teaspoons anchovy essence.

Cheese sauce: To 1 pint basic white sauce add 2-3 oz. grated cheese.

Egg sauce: To 1 pint basic white sauce add 1 chopped hard-boiled egg.

Fennel sauce: To 1 pint basic white sauce add 2 tablespoons chopped fennel.

Maitre dhotel sauce: To 1 pint basic white sauce add 1 tablespoon finely chopped parsley and mix well. Add two teaspoons lemon juice and two tablespoons thin cream or evaporated milk.

Mustard sauce:

To 1 pint basic white sauce add

2 level teaspoons dry mustard mixed with 2 teaspoons vinegar.

Parsley sauce: To 1 pint basic white sauce add

1-2 tablespoons finely chopped parsley.
