Apple Dumplings Recipe
Cooking Time: 15 minutes You will need for 4 servings:
1 lb. cooking apples pinch mixed spice
1 pint water 3 oz. shredded suet
Juice 1lemon 1 teaspoon grated
2 oz. brown sugar lemon rind
6 oz. self-raising flour
1 Peel and slice the apples and place with the water, lemon juice and sugar in a saucepan. Bring to the boil.
2 Sieve the flour and spice, add the suet and lemon rind and mix to a stiff dough with water.
3 Shape the dough into 14 small balls.
4 When the apple mixture is boiling and the sugar has dissolved, drop in the dumplings, cover with a lid and allow to cook.
Cooking Time: about 25 minutes You will need for 4 servings:
4 oz. butter or grated rind 1 lemon margarine 4 oz. sieved plain flour
4 oz. castor sugar 1 level teaspoon
2 eggs baking powder
1 Grease 6-7 dariole moulds.
2 Cream the butter or margarine with the sugar until soft and white. Gradually beat in the eggs. Add the lemon rind.
Fold in the flour and baking powder. Three-quarters fill each mould with the mixture and bake in a moderate oven (350°F -Gas Mark 4) until golden brown.
5 When cooked, turn out and serve with a jam sauce.
With vanilla: If liked, vanilla essence can be used instead of lemon rind.
These puddings can also be steamed. Cover with greased paper and steam for about 50 minutes. The mixture can also be cooked in a large basin.
