Apricot Dreams Recipe
Cooking Time: 15-20 minutes to cook apricots You will need for 4 servings:
8 oz. dried apricots 2 eggs
3 oz. sugar 1 lemon jelly
1 6-oz. can evaporated milk
1 Soak apricots overnight in enough water to cover.
2 Simmer in water until tender, add the sugar. Sieve or beat until smooth.
3 Dissolve jelly in a little hot water, stir into apricot pur1e. Make up to f pint with water.
4 Separate eggs. Pour apricot mixture on to yolks, stirring well.
5 Whisk milk, chilled if possible, until thick.
6 Whisk whites until stiff.
7 Whisk whites and milk into jelly.
8 Taste, add more sugar if required.
9 Pile into 4 individual glasses, decorate with spikes of blanched almonds, if liked.
