Bacon And Tomato Grill Recipe
Cooking Time: about 13 minutes
You will need for 4 servings:
4 rashers back bacon good pinch salt,
4 slices bread pepper and castor
1 lb. tomatoes sugar
1 level teaspoon 2 oz. cheese, finely mixed herbs grated 1 oz. butter dripping or oil for frying
1 Remove rind from rashers and fry bacon for about 5 minutes. Remove and keep hot.
2 Add extra fat to the pan if necessary and fry the bread until crisp.
3 Meanwhile, skin and slice the tomatoes. Place in a shallow fireproof dish. Sprinkle with mixed herbs, salt, pepper and sugar.
4 Dot with butter, grill for about 5 minutes.
5 Sprinkle with cheese and grill for a further 3 minutes until golden.
6 Cover the fried bread with tomato mixture, top with bacon and serve.
