Balsamic Onion Salad with Steak

Serves 2 to 4


mixed baby greens

2 large red onions, sliced

1/3 cup of red balsamic vinegar

2 tbsp of virgin olive oil

leftover steak (6 ounces per serving)



• Preheat oven to 350° F.

• On a baking sheet, use your hands to stir thinly sliced onions, balsamic vinegar, olive oil, and salt.

• Bake for 10 minutes, then cool.

• Place the greens, onions, and steak in a large salad bowl, toss lightly, and serve.

These visits made me closer to some family and friends, and created some distance with others who did not come to visit. I now know how it feels to be hospitalized and the important role visitors play. The best thing about my experience was the friendships I created while in hospital. The first week of my admission, a very happy lady came to my room to see if I wanted to be part of a pizza night in the lounge. Am I ever glad I did. Becoming friends with the ladies around me helped immensely. It helped to have someone to talk to, who didn’t know you so you could tell them what you were truly feeling and not worry about being judged. It took away the loneliness, the sadness and helped with the fears. It helped the day after losing my son. When my husband left [for the day], this virtual stranger whom I met a month ago, sat with me in my room, and held my hand while I cried.
