Basic Cocktail Sauces Recipe

You will need:

3 tablespoons mayonnaise

1 tablespoon Worcester sauce

2 tablespoons thin cream salt and pepper little lemon juice

Mix all the ingredients together.

Tomato cocktail sauce: Add 1 tablespoon tomato pur6e to the basic sauce above.

Shrimp cocktail

You will need: small quantity lettuce 1 4-oz. can shrimps

3 tablespoons plain or tomato cocktail sauce little paprika

1 Shred the lettuce and put a little into the bottom of small glasses.

2 Arrange the shrimps on top.

3 Cover with cocktail sauce.

4 Sprinkle with paprika and garnish with lemon. Serve as cold as possible.

With other shellfish: Lobster or crab can be used in place of shrimps.

Tuna cocktail

You will need:

1 small can tuna fillets 3 tablespoons plain or watercress tomato cocktail sauce 1 dessertspoon vinegar

1 Drain the oil from the fish and break the fish up into small pieces.

2 Chop the watercress and mix with the fish.

3 Add the cocktail sauce and the vinegar.

4 Put into small glasses and garnish with a sprig of watercress.

Smoked salmon

Except for special occasions this may be considered too expensive, but the prepared frozen smoked salmon now available makes a very popular hors-doeuvre.

To serve: Be sure the salmon is cut into very thin slices and that it is moist and oily. Generally allow 3-4 oz. for 3 people. Serve cayenne or paprika pepper and garnish with wedges of lemon. Serve with thin rolled brown bread and butter.

To make the rolled bread: Cut the crusts from slices of thinly cut, buttered brown bread and roll up.
