Recipe for Healtly Hair and Skin
American Hash Browns
SERVES 4
4 large potatoes, diced
30 ml/2 tbsp sunflower oil
1 large onion, finely chopped
5 ml/1 tsp paprika
Salt and freshly ground black pepper
Cook the potatoes in boiling, salted water for about 5 minutes or until just tender. Drain. Meanwhile, heat the oil in a large frying pan (skillet). Add the onion and fry(saute), stirring, for 2 minutes. Add the potatoes, paprika and a little salt and pepper. Fry, tossing over a high heat until golden brown and falling, adding a little more oil if necessary. Serve hot straight from the pan.
A knob of butter or margarine
1 large potato, thinly sliced 30 ml/2 tbsp milk
Salt and freshly ground black pepper
Spread a little of the butter on a 23 cm/9 in square of foil. Overlap the potato slices in layers in the centre of the foil, leaving enough to wrap over round the edges. Dot with the remaining butter. Spoon on the milk and sprinkle with salt and pepper. Draw the foil up over and fold the edges together to seal. Transfer to a baking sheet. Bake in a preheated oven at 190°C/375°F/gas mark 5 for about 1 hour or until the potatoes are tender. Serve straight from the parcel.
