Cheese And Onion Tart Recipe

Cooking Time: 25-30 minutes You will need for 4 servings:

2 eggs

2 oz. butter

4 oz. onions, peeled and thinly sliced

1 oz. flour

1 pint milk salt and pepper

6 oz. grated cheese 1 8-in. baked pastry case (87)

1 Melt the butter and fry the onion until soft but not coloured.

2 Stir in the flour and mix well.

3 Add the milk, stir until boiling and boil for 3 minutes. Add seasoning.

4 Cool a little, then stir in the egg yolks and most of the cheese, reheat without boiling.

5 Beat the egg whites until stiff and fold into the sauce mixture.

6 Pour into the pastry case, sprinkle with the remaining cheese and bake for about 25 minutes in a moderate oven (350°F – Gas Mark 4).
