Cheese Flan Recipe

Cooking Time: 20 minutes You will need for 4 servings:

For flan case: 4 oz. plain flour pinch salt 1 oz. butter

For filling:

2 cooked carrots, sliced

2 tablespoons cooked peas

2 hard-boiled eggs, sliced

1 oz. lard

2 oz. grated cheese cold water

2 tomatoes, peeled and sliced 1 pint cheese sauce (83) 1 oz. grated cheese

1 Make the pastry as described in the recipe for cheese and raisin pie (see above).

2 Roll out and line a flan ring or sandwich tin.

3 Prick the bottom, put in a piece of greaseproof paper and half fill with baking beans or crusts of bread.

4 Bake for about 20 minutes in a moderately hot oven (375°F – Gas Mark 5).

5 Remove the beans just before the pastry is cooked.

6 Arrange the vegetables and eggs in the cooked flan case alternately with the sauce in layers, finishing with sauce.

7 Sprinkle with grated cheese and brown under the grill or heat through in the oven.
