Cheese Pie Recipe
Cooking Time: 20-25 minutes
You will need for 4 servings:
3 oz. breadcrumbs 1 egg
1 pint boiling milk salt and pepper
3 oz. grated cheese nutmeg
1 oz. butter
1 Put the breadcrumbs into a basin and pour on the boiling milk. Leave to stand for 10 minutes.
2 Add cheese, butter, egg yolk and seasonings.
3 Beat the egg white stiffly and fold into the mixture.
4 Pour into a greased fireproof dish and bake in a moderately hot oven (375°F – Gas Mark 5), until set.
Cheese and potato pie

11 lb. cooked potatoes salt and pepper
1 oz. butter little milk
1 oz. butter
1 oz. cornflour
1 pint milk
4 oz. grated cheese nutmeg
2 oz. breadcrumbs 2 eggs salt and pepper
1 Mash the potatoes with the butter and a little milk and season well.
2 Use to line a greased pie dish, having a thin layer of the potato over the bottom of the dish.
3 Make a sauce with the butter, cornflour and milk and add cheese, breadcrumbs, egg yolks and seasoning.
4 Beat the egg whites stiffly and fold into the mixture.
5 Turn into the prepared dish and bake about 20 minutes in a moderately hot oven (375°F- Gas Mark 5).
