Cheese Pudding Recipe

Cooking Time: 25-30 minutes

You will need for 4 servings:

6-8 slices bread and 2 teaspoons butter Worcester sauce 2 eggs 4 oz. grated cheese salt and pepper 1 pint milk

1 level teaspoon made 1 tablespoon bread-mustard crumbs

1 small onion, finely chopped

1 Put the slices of bread and butter into a greased fireproof dish.

2 Beat up the eggs with the seasonings and add the onion, Worcester sauce and most of the cheese.

3 Stir in the milk, then pour into the pie dish and leave to stand for about 10 minutes.

4 Mix the remaining cheese and breadcrumbs together, sprinkle on top of the pudding and bake in a moderate oven (350°F – Gas Mark 4) until the pudding is set.

Cheese and onion pudding

Cooking Time: about 20 minutes You will need for 4 servings:

8 oz. onions 4 oz. grated cheese

1 pint milk

6 oz. fresh breadcrumbs

3 eggs salt and pepper cayenne pepper chopped parsley

1 Peel and slice the onions thinly and cook slowly in the milk until just tender.

2 Remove from the heat, add the breadcrumbs and beaten eggs and most of the cheese.

3 Season very carefully with salt, pepper and a little cayenne pepper.

4 Turn into a greased fireproof dish, sprinkle with the remaining cheese and bake about 20 minutes in a moderate oven (350°F – Gas Mark 4). Sprinkle with chopped parsley.

Cooking Time: about 15 minutes You will need for 4 servings:

1 oz. butter 4 oz. cooked diced

1 oz. flour meat

1 pint stock or milk little chopped red

4 oz. grated cheese pepper salt and pepper 2 packets potato

2 hard-boiled eggs crisps

4 oz. cooked mixed vegetables

1 Make a sauce with the butter, flour and stock or milk.

2 Add most of the cheese and season carefully.

3 Pour a little of the sauce into a fireproof dish, slice the eggs and arrange on top.

4 Add the vegetables, meat and pepper to the remaining sauce and heat through.

5 Pour into the dish.

6 Crush the potato crisps, mix with the remaining cheese and sprinkle on top.

7 Put under the grill to brown.
