Cheese Souffle Recipe

Cooking Time: 25-30 minutes

You will need for 4 servings:

1 oz. butter 3 eggs

1 oz. cornflour 4 oz. grated cheese

1 level teaspoon dry salt and pepper mustard nutmeg

1 pint milk

1 Prepare a 6-in. souffle dish or pie dish by greasing lightly.

2 Melt the butter, add the cornflour and mix well, stir in the mustard.

3 Add the milk gradually, stir until boiling and boil for 3 minutes.

4 Add egg yolks, cheese and seasoning.

5 Fold in the stiffly beaten egg whites.

6 Turn into the prepared dish and bake in a moderately hot oven (375°F – Gas Mark 5), until firm and set.

Easy cheese souffle

Cooking Time: 30 minutes

You will need for 2 servings:

1 packet cheese sauce 2 eggs

1 pint milk

1 Grease a 5-in. soufflS dish.

2 Make up the cheese sauce as directed on the packet, using only 1 pint milk.

3 Separate the eggs. Stir the yolks into the sauce.

4 Whisk whites until stiff and fold into sauce.

5 Pour into the souffle dish. Bake in a moderately hot oven (375°F Gas Mark 5). Serve.
