Cheese Soup Recipe
Cooking Time: about 25 minutes
You will need for 4 servings
2 medium-sized 4 oz.
Cheddar cheese
potatoes 3-4 tablespoons thin
1 onion cream
1 carrot salt and pepper
1 stick celery little chopped parsley
1 pint stock or water
1 Prepare and dice the vegetables.
2 Put into a pan with the stock and simmer until tender, about 15 minutes.
3 Stir in the grated cheese and cream.
4 Add seasonings as required and add parsley just before serving.
Vegetable soup
Cooking Time: about 30 minutes You will need for 4 servings:
2 onions 8 oz. potatoes 8 oz. turnips 2 oz. butter 1 pint water salt and pepper
3 oz. cooked green peas or 1 small packet frozen peas
1 level tablespoon cornflour 1 pint milk
1 Slice the onions thinly and cut the other vegetables into thin strips.
2 Saute all in the butter for a few minutes.
3 Add the water, bring to the boil, cover and simmer for about 15 minutes, until the vegetables are tender.
4 Add seasoning as required and add the peas.
5 Mix the cornflour smoothly with the milk, stir into the soup. Stir until boiling and cook for
2 minutes longer.
