SERVES 6 READY IN 13 MIN + CHILLING
150g cherries, stoned, plus extra to serve 65g castor sugar 150g mixed frozen berries
4 gelatine leaves 400ml soda water 1 tbsp Crème de Cassis 150g fat-free plain yoghurt

IPut the cherries and sugar in a pan and heat gently until the sugar has dissolved and the cherries have softened slightly. Add the mixed berries and then
2 Put the gelatine in a bowl and cover with cold water until it has
softened. Pour 150ml soda water into a pan with the Crème de Cassis. Remove the gelatine from the liquid, squeeze out and add to the pan. Heat gently until gelatine dissolves. Pour into a jug, then gradually stir in the remaining soda water.
3 Spoon the fruit into
6 glasses and put on a tray. Pour over the soda water mixture and chill. Serve with yoghurt and fresh cherries.
