CHICKEN AND DOUFU IN CLEAR BROTH

Ingredients:

1/2 lb. minced bean curd 1/2 lb. minced chicken

1 tsp. minced scallion and ginger

4 egg whites

1 tsp. sherry

3 cups clear broth

A few bean sprouts

1 tbsp. chicken fat

Salt and pepper powder to taste

To Prepare:

1. Add chicken, scallion and ginger, egg whites, salt, sherry and pepper powder to mashed bean curd. Mix thoroughly. Place the mixture on a plate. Steam over a medium flame for about 20 minutes. Cut into diamond shaped pieces.

2. Put soy bean sprouts, salt and broth in a pot and bring to a boil. Sprinkle with pepper powder and chicken fat. Pour the soup over the steamed bean curd. Serve-
