Chicken And Mushroom Pncakes Recipe

Cooking Time: 10 minutes for filling You will need for 4 servings:

1 pint pancake batter 1 level tablespoon

1 oz. butter flour

4 oz. chicken livers 1 pint stock or milk

2 oz. mushrooms 2 oz. cooked chicken salt and pepper

1 Heat the butter.

2 Chop the livers and mushrooms and cook until the mushrooms are tender.

3 Stir in the flour and mix well.

4 Add stock, stir until boiling and boil for 1 minute.

5 Add chopped chicken and season carefully.

6 Make the pancakes (as before) and as each one is cooked, put a spoonful of the filling in the centre and roll up.

7 Put into a fireproof dish and keep hot.

8 If liked, serve with cheese or tomato sauce, 83.
