Chocolate Souffle Recipe

Cooking Time: a few minutes to melt chocolate

You will need for 4 servings:

1 lemon jelly

4 oz. plain chocolate

1 large can evaporated milk

1 oz. chocolate buttons, optional thick cream, optional

1 Tie a double band of greaseproof paper round the outside of a 5-6 in. souffle dish. The paper should come 2 inches above the rim of the dish.

2 Dissolve the jelly in 1 pint of hot water, leave to cool.

3 Place chocolate (broken into pieces) with 4 tablespoons water in a basin over a pan of hot water. Heat until chocolate is melted. Leave to cool.

4 Whisk the milk, chilled if possible, until thick.

5 Whisk the jelly, when almost setting, into the milk.

6 Fold in the melted chocolate, mix well.

7 Pour into prepared dish, leave in a cold place to set.

8 When set, remove paper, decorate top with chocolate buttons or whipped cream, as liked.
