Cilantro-Lime Vinaigrette


Sprinkle Southwest Seasoning on tuna. Heat oil in a large nonstick skillet over medium-high heat. Add tuna; cook 3 to 5 minutes on each side or until fish flakes with a fork.

Toss greens with desired amount of Cilantro-Lime Vinaigrette. Arrange greens on individual serving plates. Top with tuna, and drizzle with remaining vinaigrette. Yield: 4 servings.

1/4 cup fresh lime juice

2 tablespoons sugar

3 tablespoons rice wine vinegar

2 tablespoons olive oil

2 teaspoons finely chopped fresh cilantro

1 garlic clove, minced

1 shallot, minced

1/4 teaspoon salt

1 teaspoon coarsely ground pepper

Whisk together all ingredients until blended. Yield: 1 cup.

1/4 cup paprika

2 tablespoons ground red pepper

2 tablespoons kosher salt*

1 tablespoon garlic powder

1 tablespoon dried thyme

1 tablespoon dried basil

2 teaspoons onion powder

2 teaspoons coarsely ground black pepper

1 teaspoon crushed red pepper

Combine all ingredients. Store in an airtight container. Yield: 1 cup.
