Clam Soup Recipe

Cooking Time: 15-20 minutes You will need for 4 servings:

1 oz. butter 1 71-oz. can minced

little grated onion 1 oz. flour 1 pint white stock 1 pint milk

clams salt and pepper pinch celery salt little chopped parsley grated cheese

1 Melt the butter and sautd the onion for a few minutes.

2 Add the flour and mix well, cook for a few minutes longer.

3 Add the stock and milk gradually. Stir until boiling and boil for 1 minute.

4 Add the clams and reheat without boiling.

5 Add salt and pepper as required and the celery salt.

6 Sprinkle with parsley before serving and serve grated cheese separately.

Summer soup

Cooking Time: about 25 minutes You will need for 4 servings:

2 pints stock or water 1 small lettuce

2 oz. sago 1 sprig mint

3-4 carrots 8 oz. shelled green

2-3 oz. runner beans peas

1 small onion salt and pepper

1 Heat the stock to boiling point, add the sago.

2 Dice the carrots and beans, chop the onion finely.

3 Shred the lettuce and chop the mint.

4 Add all the ingredients to the pan with a little salt and pepper.

5 Cover and simmer until the vegetables are tender and the sago is cooked.
