Coconut Rockies Recipe

Cooking Time: 10-12 minutes You will need:

5 oz. self-raising flour 1 small egg

Pinch salt 3 oz. desiccated

4 oz. margarine coconut

4 oz. sugar

1 Sieve the flour and salt.

2 Cream the fat and sugar and beat in the egg.

3 Stir in the flour and coconut.

4 Half-fill small paper cases with the mixture.

5 Place on a baking sheet and bake in a hot oven (425°F – Gas Mark 7).

6 Cool on a wire tray.

Almond twists

Cooking Time: 10 minutes

You will need:

5 oz. plain flour pinch salt

3 oz. butter

2 dessertspoons castor sugar

For the topping: little beaten egg white castor sugar

1 Sift flour with salt. Rub fat in lightly. Add the sugar.

2 Stir in beaten egg and essence. Mix to a soft dough.

3 Divide dough into 9 equal portions, roll each into a long sausage about 7 in. long on a lightly floured surface.

4 Curl each round into a pincurl shape. Place on a baking sheet.

5 Brush the top of each with egg white and sprinkle with castor sugar and finely chopped blanched almonds, if available.

6 Bake in a moderately hot oven (400°F – Gas Mark 6) until golden.

7 Leave to cool on a wire tray.
