Recipe for Healtly Hair and Skin
SERVES 4

1 small crisp lettuce, torn into pieces

4 tomatoes, diced A cucumber, skinned and diced 1 small onion, sliced and separated into rings 12 stoned (pitted) green olives 30 ml/2 tbsp chopped mixed herbs 45 ml/3 tbsp olive oil 15 ml/1 tbsp white wine vinegar Salt and freshly ground black pepper

Divide the lettuce between four serving plates. Scatter the tomatoes, cucumber, onion and olives over. Sprinkle liberally with the herbs. Drizzle with the oil and vinegar and season with a little salt and a good grinding of pepper.
