Recipe for Healtly Hair and Skin
Mediterranean Rustic Salad
1/2head of Chinese leaves (stem lettuce), shredded 100 g/4 oz/1/2 button mushrooms, sliced 200 g/7 oz/1/2 bean sprouts 1 red (bell) pepper, cut into thin strips
1 red eating (dessert) apple, diced 50 g/2 oz/1 cup walnut halves 45 ml/3 tbsp plain yoghurt 15 mill tbsp light soy sauce 5 mill tsp chopped parsley 5 mill tsp chopped tarragon 5 mill tsp snipped chives 15 mill tbsp walnut oil Onion salt
Freshly ground black pepper A little milk
Put the Chinese leaves, mushrooms, bean sprouts, pepper and apple in a bowl. Reserve a few of the walnut halves for garnish and roughly cut up the remainder. Add to the bowl. Blend the yoghurt with the soy sauce, herbs and oil until well blended. Season to taste with the onion salt and pepper. Thin, if necessary, with a little milk to form a fairly runny dressing. Pour over the salad and toss gently. Garnish with the reserved walnuts before serving.
