You will need for 1 glass:

3-4 Ice cubes 1 slice fresh lemon rind

1 part extra dry sherry

3 parts dry white Spanish wine (Spanish Chablis, Vino Secco)

1 Put the Ice cubes into a glass jug.

2 Pour the sherry and wine over the ice.

3 Stir vigorously; strain and pour into a chilled martini glass.

4 Twist the lemon rind over the drink and drop it in.

Baton Blanc

You will need for 1 glass:

3 parts dry white wine

4-5 Ice cubes

3 drops orange or Angostura bitters

1 part dry French vermouth (Chablis, Hock or Muscadet)

1 Put the Ice cubes into a glass jug.

2 Shake the bitters over the Ice and add the vermouth and wine.

3 Stir vigorously; strain and pour into a chilled martini glass.

Petit Piton

You will need for 1 glass:

4-5 Ice cubes 3 drops Angostura juice 1 fresh orange (or 4 tablespoons canned, unsweetened juice) juice 1 fresh lime or lemon

1 Put the Ice cubes into a glass jug.

2 Pour the fruit juices, bitters and the wine over the ice.

3 Stir vigorously; strain and pour into a sour glass bitters 3 parts dry white wine (Blanc-de-Blanc, Chablis or Muscadet)
