FISH AND DOUFU SOUP

Ingredients:

1 lb. mashed bean curd

4 oz. minced fish meat

3 egg whites

Salt and pepper powder to taste

1 tsp. minced scallion and ginger

2 tbsp. cornstarch

2 tbsp. vegetable oil

4 cups clear broth

1/2 oz. cooked Chinese ham, sliced

Several leaves baby Chinese cabbage

1 tsp. sherry

To Prepare:

1. Mix mashed bean curd with fish, egg whites, salt, minced scallion and ginger, pepper powder and cornstarch and place on an oiled plate. Steam over a medium flame until well-done. Cut into rectangular slices.

2. Put broth, steamed bean curd and ham, Chinese cabbage, salt and sherry in a pot and bring to a boil. Sprinkle with pepper powder and serve.
