FISH AND PORK WITH DOUFU

Ingredients:

1 lb. minced bean curd

3 oz. minced fish

3 egg whites

1 tbsp. minced scallion and ginger 1/2 cup cooking oil 1 oz. minced pork

1 tbsp. soy bean paste

1 tbsp. sherry

4-5 minced dry mushrooms soaked in water 1/2 cup clear broth

1 tbsp. soy sauce

2 tbsp. cornstarch dissolved in water

Salt to taste

To Prepare:

1. Add fish, egg whites, salt, and minced scallion and ginger to bean curd. Mix thoroughly. Steam over a medium flame. When it is well done, about 30 minutes, cut into 2 cm. cubes.

2. Heat the oil over a high flame until it smokes. Add the minced pork and stir-fry for 2 minutes. Add soy bean paste, sherry, mushrooms, broth, soy sauce and bean curd. Bring to a boil. Thicken with cornstarch and sprinkle with chopped scallions and serve-
