Fish Souffle Pie Recipe

Cooking Time: about 25 minutes You will need for 4 servings: 6 oz. cooked white 1 tablespoon thin fish cream

1 oz. butter salt and pepper

1 oz. cornflour lemon juice

1 pint milk 1 dessertspoon finely

2 eggs chopped parsley

1 tablespoon breadcrumbs

1 Flake the fish very finely.

2 Make a thick white sauce with the butter, cornflour and milk.

3 Add egg yolks, fish, breadcrumbs, cream, seasoning, lemon juice and parsley.

4 Fold in the stiffly beaten egg white.

5 Put into a greased pie dish and bake in a moderately hot oven (375°F – Gas Mark 5) for about 20-25 minutes.

Sardine snack

Cooking Time: 10 minutes You will need for 4 servings:

4 slices bread salt and pepper

a little butter 1 packet cheese

1 tin sardines sauce

1 tablespoon vinegar 1 pint milk

1 Toast bread on both sides.

2 Remove crusts and spread lightly with butter. Cut bread into fingers.

3 Drain sardines and arrange 1 or 2 on each piece of bread. Sprinkle with vinegar, salt and pepper.

4 Place on flameproof dish and keep warm under grill.

5 Make up cheese sauce according to instructions on the packet using 1 pint milk and pour over sardines.

6 Brown under grill and serve.
