Flaky Pastry Recipe
You will need:
8 oz. flour squeeze lemon juice pinch salt cold water to mix
6 oz. fat – use butter or equal quantities of margarine and lard
1 Sieve flour and salt into a bowl.
2 Cream the fat until soft and pliable, and divide into four portions.
3 Rub one portion of the fat into the flour, add a squeeze of lemon juice and sufficient cold water to make a soft dough.
4 Roll the dough into an oblong. Cover f of this with another portion of the fat, dabbing the fat in small pieces over the dough.
5 Fold the dough in three, starting at the bottom with the uncovered section. Bring this up to the centre of the oblong. Bring the top third down over this. Lightly press tbe edges together with a rolling pin.
6 Half turn the pastry to the left and roll it out into an oblong.
7 Repeat this process (Nos. 5 and 6) twice, adding another portion of the fat each time.

8 Fold the pastry in three once more, without adding fat.
Wrap the pastry in greaseproof paper or foil, and leave in the fridge or a cold place for an hour before rolling out for use.
If possible leave the pastry to relax in a cool place for about 10 minutes between each rolling.
