Fresh Ginger Cookies

This cookie is one of those rare desserts that Kapha can eat in more than small amounts. They are sweet, pungent, salty, and astringent. Since they are made entirely with barley flour, one of Kaphas best grains, and contain a generous amount of pungent ginger, they are a good dessert to serve to weight watchers. The fresh ginger really makes these sparkle!
White Figs a la Kapha
Although other figs like black Mission or brown Turkey figs are nourishing, none is held in such esteem as Calmyrnasknown in Sanskrit as anjier. Also called white figs, they are closer to a pale blond color when dry. They are sold dried at most supermarkets and health food stores. The concentrated sugar in anjier and all dried fruits is Kapha-increasing, so eat them in moderation. Dried fruit digests better when it is steamed or simmered in a small amount of water to return some of the liquid to it.
Plump some Calmyrna figs in a vegetable steamer for 5 minutes and serve them warm. One or two figs and a few fresh ginger cookies make a satisfying dessert for Kapha.
