Ginger Nuts Recipe

Cooking Time: 15-20 minutes

You will need:

4 oz. self-raising flour

2 level teaspoons ground ginger

1 level teaspoon ground cinnamon

1 level dessertspoon sugar

1 teaspoon bicarbonate soda 2 oz. white vegetable fat

2 tablespoons golden syrup y

1 Sieve the dry ingredients.

2 Melt the fat and syrup over a low heat and allow to cool.

3 Stir in the dry ingredients, mixing well with a wooden spoon.

4 Take pieces, about the size of a walnut, and roll into a ball between the palms of the hands.

5 Place well apart on a greased baking tray. Flatten slightly.

6 Bake in a moderate oven (375°F – Gas Mark5).

Almond drops: Make as before, omitting spices but adding 1 teaspoon almond essence with the syrup mixture. Press half a blanched almond into the centre of each ball before baking.


Cooking Time: 30-35 minutes You will need:

3 oz. margarine 4 oz. golden syrup

2 oz. demerara sugar 8 oz. rolled oats

1 Melt the margarine, sugar and syrup together in a pan.

2 Add the rolled oats and mix together thoroughly.

3 Turn the mixture into a greased tin, 11^x7^ inches.

4 Spread over the tin evenly and press down firmly.

5 Bake on the middle shelf of a moderate oven (350°F – Gas Mark 4).

6 Remove from the oven.

7 Cut into 16 pieces and leave to cool in the tin.
