Simple to make and a sweet, oily, nourishing appetizer, panir cubes prepared this way can also be tossed into stir-fried vegetables just before serving. They can be seasoned while frying with nutmeg, ground coriander, cumin, or any other ground spice of your choice.
Serves 4 to 6
1 recipe Panir (pages 14S-146)
1/2 cup ghee
Cube the panir in 1 1/2-inch squares. Heat the ghee in a heavy 10-inch frying pan over moderately high heat. Fry the cubes, turning frequently until each side is golden brown. Skewer on toothpicks and serve hot with a dipping sauce.
