Grilled Steak Recipe
Cooking Time: 6-15 minutes, depending on cut You will need for 4 servings: H lb. steak cut 2 salt and pepper inch thick maitre d’hotel butter lemon juice (13) butter or oil
1 Choose fillet, entrecote or rump steak for grilling.
2 Prick with a fork all over and sprinkle with lemon juice.
3 Beat with a rolling pin, sprinkle with salt and pepper.
4 Brush with melted butter or oil.
5 Grease the rack of the grill pan and place steaks on the rack.
6 Cook under a hot grill until steak has browned slightly on first side.
7 Turn meat over, using a fish slice or palette knife to avoid piercing the steak.
8 Cook quickly until brown on the second side.
9 Allow 6-10 minutes for fillet steak, 10-15 minutes for entrecote, 10-15 for rump steak.
10 Serve steak on a hot meat dish, top each with a pat of maitre dhotel butter.
11 The usual accompaniments for grilled steak are grilled tomatoes or mushrooms, chipped potatoes and watercress.
