Recipe for Healtly Hair and Skin

Chilli Bean Potatoes

SERVES 4

4 large even-sized potatoes Olive oil

Salt

200 g oz/1/2 small can chopped tomatoes 425 g/15 oz/1 large can red kidney beans, drained

5 ml/1 tsp chilli powder

5 ml/1 tsp dried oregano

5 ml/1 tsp ground cumin

Salt and freshly ground black pepper Soured (dairy sour) cream or plain yoghurt

Prepare and cook the potatoes as for Cheese and Herb Potatoes ( 243). Meanwhile, put the tomatoes and drained beans in a saucepan with the chilli powder, oregano and cumin. Bring to the boil, reduce the heat and simmer for 5 minutes. Season to taste. Spoon on to the split and squeezed potatoes. Add a spoonful of soured cream or yoghurt and serve.
