Recipe for Healtly Hair and Skin
4 large even-sized potatoes
275 g/10 oz/1/2 small can diced mixed vegetables, drained 30 ml/2 tbsp mayonnaise 30 ml/2 tbsp salted peanuts 15 ml/1 tbsp chopped parsley Freshly ground black pepper Cayenne
Prepare and cook the potatoes as for Cheese and Herb Potatoes ( 243). Meanwhile, mix the drained vegetables with the mayonnaise, peanuts, parsley and pepper. Mix well. Spoon into the split and squeezed potatoes and sprinkle with cayenne before serving.
