Meat Balls Recipe
Cooking Time: 5-7 minutes You will need for 4 servings:
1 lb. raw minced beef 2 slices bread
4 oz. sausage meat 2 medium-sized onions 1 teaspoon grated lemon rind 1 teaspoon chopped parsley
1 pint milk
salt and pepper
2 eggs flour
browned breadcrumbs fat for frying
1 Mix the beef and sausage meat, adding the onions, grated or finely chopped, lemon rind and parsley.
2 Remove crusts from bread, soak slices in milk and mash to a paste with a fork.
3 Add bread, 1 egg and a good pinch salt and pepper to meat. Mix well.
4 Leave in a cold place for 2-3 hours.
5 Form into balls with floured hands. Dip in beaten egg, toss in breadcrumbs.
6 Fry in deep fat until golden brown. Drain well and serve.
Meat balls with noodles
Cooking Time: 45 minutes You will need for 4 servings:
meat balls (see 1 pint stock, made
preceding recipe) from beef stock cube
2 oz. butter salt and pepper
2 tablespoons flour 8 oz. noodles
1 Make meat balls as in preceding recipe. Omit egg and breadcrumb coating.
2 Melt butter, stir in the flour and cook for 3 minutes.
3 Gradually stir in stock and bring to the boil. Reduce heat and simmer for 20 minutes, adding salt and pepper to taste.
4 Add meat balls, cover and cook over a low heat for 15 minutes.
5 Meanwhile, cook noodles in boiling salted water until tender. Drain well.
6 Pile noodles in a hot dish. Pour sauce and meat balls into the centre and serve.
