Pickled Pasta Salad
Prepare as for Simple Pasta Salad but add 15 ml/1 tbsp chopped gherkins (cornichons), 25 g/1 oz/ 2 tbsp sliced stuffed olives and 5 ml/1 tsp capers to the cold pasta.
225 g/8 oz/ 1 cups bulgar wheat
1 bunch of spring onions (scallions), chopped
2 eating (dessert) apples, chopped 75 g/3 oz/ l3/ cup Feta cheese, cubed 50 g/2 oz/ JZ cup cashew nuts
10 ml/2 tsp chopped parsley 10 ml/2 tsp chopped tarragon 30 ml/2 tbsp olive oil 15 ml/1 tbsp wine or cider vinegar 15 ml/1 tbsp lenwn juice Freshly ground black pepper 15 ml/1 tbsp chopped mint
1 quantity Yoghurt Dressing ( 306)
Soak the bulgar in boiling water for 30 minutes, drain, if necessary and leave to cool. Mix together all the remaining ingredients except the Yoghurt Dressing in a large bowl, then add the dressing and toss together well.
