Minute Mousse Recipe

Cooking Time: 5 minutes

You will need for 4 servings:

1 packet chocolate 1 egg flavoured cornflour 1 pint milk

4 level tablespoons castor sugar

1 Mix the flavoured cornflour, sugar and egg yolk smoothly with a little of the cold milk.

2 Heat rest of the milk.

3 Pour on to the mixed cornflour, stirring well.

4 Return to saucepan and boil for 1 minute, stirring all the time, then cover the saucepan and allow to cool, but not set.

5 Whisk the egg white stiffly and lightly fold into the cooked mixture.

6 Pour into sundae glasses and decorate as liked.

Clementine pudding

No Cooking

You will need for 4 servings:

1 lemon jelly 1 teaspoon cornflour

1 can mandarin 1 pint milk


1 egg

1 tablespoon sugar

1 Dissolve the jelly in a little hot water.

2 Drain the fruit, adding the juice to the jelly.

3 Make the jelly and fruit juice up to f pint with cold water. Leave in a cool place.

4 Beat the egg slightly, blend with the cornflour.

5 Heat the milk until almost boiling, stir on to the beaten egg.

6 Pour back into the pan, cook over a gentle heat until thick, stirring throughout.

7 Remove from the heat, stir in 1 tablespoon sugar. Leave until cool.

8 Chop half the fruit. Stir chopped fruit and jelly into the milk mixture.

9 Pour into a 1-J-pint mould. Leave to set.

10 Turn out and decorate with remaining fruit.
