Moulded Grapefruit Salad Recipe

You will need for 4 servings:

1 16-oz. can 1 dessert apple, grapefruit peeled and chopped

1 oz. gelatine 2-3 sticks celery,

2 tablespoons lemon chopped juice

1 Drain the syrup from the grapefruit and make the quantity up to 1 pint with water.

2 Dissolve the gelatine in a little of the syrup over hot water, then add to the rest of the syrup. Add lemon juice and leave until it just begins to get syrupy.

3 Fold in the grapefruit segments, apple and celery.

4 Pour into a mould and turn out when set.

Honeyed salad

You will need for 4 servings:

For dressing:

1 tablespoon thin 3 tablespoons lemon

honey juice

For salad:

8 oz. dessert apples

2 oz. seedless raisins

8 oz. cooked carrots 2 oz. mixed nuts

1 Mix the honey and lemon juice together.

2 Peel and core the apples and cut into dice.

3 Add the raisins, chopped nuts and sliced carrots.

4 Mix with the dressing and leave in a cool place for an hour before using.

Note

Serve this salad with galantines or with cold turkey.
