Palermo Salad Recipe
You will need for 4 servings:
1 small lettuce 1 good tablespoon 2 tablespoons diced, mayonnaise (see cooked carrots page 82) 2 tablespoons cooked lemon juice green peas little made mustard 2 tablespoons cooked 4-6 slices cooked ham rice
1 Line a shallow serving dish with the lettuce.
2 Mix the carrots, peas and rice together, and season as required.
3 Mix the mayonnaise with a squeeze of lemon juice and a little mustard.
4 Add the vegetables to the mayonnaise and mix well.
5 Put a good spoonful of the mixture on each slice of ham and roll up or just fold in half.
6 Arrange on the lettuce and garnish as liked with olives or tomato wedges.
You will need for 4 servings: 1 lettuce 2 small apples, peeled, 4 cooked herrings, cored and diced preferably soused 3-4 cooked potatoes, 1 cooked beetroot, diced peeled and diced French dressing (82)
1 small apple chopped parsley
little lemon juice
1 Arrange the lettuce on a shallow serving dish.
2 Remove skin and bones from the fish and flake finely.
3 Mix with the beetroot, diced apples and potatoes.
4 Toss lightly in the dressing and pile on top of the lettuce.
5 Core but do not peel the apple, cut into slices, dip in lemon juice and place round the fish mixture.
6 Sprinkle with parsley before serving.
