Pancakes Recipe

Cooking Time: about 6 minutes each pancake You will need for 4 servings:

8 oz. plain flour melted cooking fat or

J teaspoon salt oil

2 eggs lemon

1 pint milk castor sugar

1 Sieve the flour and salt into a mixing bowl. Make a well in the centre and break the eggs into this.

2 Add about 1 pint of the milk and stir, gradually working in the flour from the sides.

3 Add enough milk to give a stiff batter consistency. Beat thoroughly for at least 5 minutes, then cover, and leave to stand for 30 minutes.

4 Add the remaining milk and stir well. Pour the mixture into a jug.

5 Pour about 1 tablespoon of melted fat or butter into a small clean frying pan or omelette pan.

6 Just as the fat is beginning to smoke, pour in enough batter to cover the bottom of the
