75g butter

2 Little Gem lettuces, shredded

500g frozen petits pois or fresh peas, shelled

8 spring onions, chopped

1 teaspoon sugar

50ml boiling water

Salt and freshly ground black pepper

To serve

Approximately 1 tablespoon chopped mint

Melt the butter and stir in the lettuce, peas and onions until glossy. Add the sugar and water. Cover, stew gently for 20 minutes, then season. To serve, sprinkle with mint. Serves 6


A friend and former coworker visited me in hospital twice a week, bringing her small son with her. They soon became a part of our antenatal group, hanging out in the common room with our group of big bellies. This friend also took me out for small outings, including spending Mother’s Day enjoying a seafood feast at a restaurant near the hospital. A close high school friend who lived a short drive from the hospital picked me up every week, took me to her house and, not only made me supper, but also washed my laundry. This was greatly appreciated as the washing machine on my floor was broken for most of my time in antenatal. Back at home, a mom I had met at my daughter’s dance class, who had spent part of her first pregnancy on hospital bed rest, took my daughter to her dance classes. She knew exactly what I was going through, and knew the best way to help was to take some of the load off my husband in caring for our daughter. Another mom bought flowers for my husband to give to my daughter after her dance recital knowing he would likely forget. And the list went on. Not only was I grateful for the support we received, but it also strengthened old friendships and created new friendships.
