Potato And Leek Soup Recipe

Cooking Time: about 25 minutes

You will need for 4 servings:

1 rasher of bacon 2-3 tablespoons thin

1 oz. butter cream or top of the

1 lb. potatoes milk

3 leeks parsley

1 pint stock or water grated cheese salt and pepper

1 Chop the bacon and fry lightly in a saucepan,

2 Add the butter.

3 Chop the potatoes and leeks and sautd in the fat for a few minutes.

4 Add the stock and salt and pepper.

5 Cover and simmer for about 20 minutes.

6 Add the cream.

7 Just before serving add chopped parsley and serve with grated cheese.

Onion soup

Cooking Time: about 30 minutes You will need for 4 servings:

1 lb. onions

1 oz. butter J pint stock bouquet garni

2 level tablespoons flour

1 pint milk

3-4 tablespoons croQtons (8) grated cheese

1 Slice the onions thinly and cook slowly in the butter until tender.

2 Add the stock and bouquet garni.

3 Cover and simmer for about 20 minutes.

4 Mix the flour smoothly with the milk and stir into the soup.

5 Stir until boiling and boil for 1 minute.

6 Season as required.

7 Put the crofitons into a soup tureen and pour the soup over.

8 Sprinkle with cheese or serve it separately.
