Potato Bake Recipe
Cooking Time: 25 minutes You will need for 4 servings:
1 packet mushroom 1 oz. breadcrumbs soup 3 oz. grated Cheddar
3-4 oz, streaky bacon cheese 1 lb. boiled potatoes
1 Make up mushroom soup.
2 Chop bacon roughly and fry for 5 minutes.
3 Slice potatoes and place half in a greased baking dish. Sprinkle bacon over potatoes. Add remaining potatoes.
4 Pour in soup – about 1 pint will be required.
5 Mix breadcrumbs and cheese. Sprinkle over the top layer of potatoes.
6 Bake in a hot oven (400°F – Gas Mark 6) for 15-20 minutes until heated through.
Parsnip and potato cakes
Cooking Time: 5-7 minutes
You will need for 4 servings:
8 oz. cooked parsnips 1 egg yolk
8 oz. boiled potatoes salt and pepper pinch brown sugar
1 tablespoon chopped parsley
1 tablespoon thin cream or top of milk egg and breadcrumbs for coating
1 Rub the parsnips and potatoes through a sieve.
2 Add seasoning, sugar and parsley, and bind with egg yolk and cream.
3 Shape into rissoles, coat with egg and breadcrumbs and fry in hot fat until crisp and golden.
4 These are very good served with grilled rashers of bacon.
