Quick Soups Recipe

Soup is always popular, whether it is served as the start of a full-course meal, or to provide more nourishment with a light snack. And there is no reason to feel that you cannot attempt soup making because you have no time to prepare the stock. In all of the recipes in the

following chapter, a cube of chicken or meat stock may be used, if home-made stock is not available. However, if cubes are used, you must remember that extra seasoning may not be necessary.

Consomme Soups

Cooking Time: about 10 minutes You will need for 4 servings:

2 Pints chicken stock salt and pepper

2 tablespoons sherry croutons or parsley to squeeze lemon juice garnish

1 Heat the chicken stock.

2 Add sherry and lemon juice.

3 Add seasoning as required.

4 Serve with croutons or sprinkle with parsley.

To make croutons

1 Cut some day old bread into small dice or fancy shapes and fry in hot fat. Drain well before using.

2 Make some toast and cut into dice.

Consomme a la princesse

Cooking Time: about 10 minutes You will need for 4 servings:

4 oz. cooked green

4 oz. cooked chicken 1J pints chicken stock peas salt and pepper

1 Shred the chicken.

2 Put into a pan with the chicken stock anc peas and heat well.

3 Add seasoning as required.

Jellied consomme

Cooking Time: about 15 minutes You will need for 4 servings:

2 pints chicken stock

1 oz. gelatine

2 tablespoons sherry

1 tablespoon lemon juice

1 egg white

1 egg shell, crushed

1 Put all the ingredients together in a large pan.

2 Heat to boiling point, whisking all the time.

3 Simmer for 5 minutes, then strain through a piece of double muslin.

4 Season as necessary and leave to set.

5 Break up with a fork and serve well chilled.

Tomato consomme: Follow the recipe as above and add 1 small can tomato puree to the other ingredients.
