Rich Short Crust Pastry Recipe

You will need:

8 oz. flour 1 teaspoon castor pinch salt sugar

5 oz. butter 1-2 tablespoons cold

1 egg yolk water

1 Sieve flour and salt into a bowl.

2 Rub the butter lightly into the flour, using finger tips, until the mixture resembles breadcrumbs.

3 Add sugar and egg yolk, work into the flour, adding water gradually until the mixture forms a firm dough.

4 Turn on to a floured surface, knead lightly and roll out. If a pastry is difficult to handle, leave in a cold place for at least half an hour before using.
