IHeat the oven to 200°C. Mix 100g light brown sugar with 3 tsp cornflour in a bowl, crushing it together with the back of a spoon (to stop lumps forming). Add 500g stoned cherries and 1 tsp fresh thyme leaves; mix well.

2 Spread out in a roasting tin and bake for 35-40 min, stirring every 10 min. Serve with a scoop of vanilla ice cream.

IPut 200g oats, 10 grated apples and 60g dried cherries (try By Nature’s Dried Sour Cherries; faithfui-to-nature. co.za) in a large bowl. Pour over 400ml apple juice. Mix, cover; chill overnight.

2 To serve, divide mixture between 6 small bowls and top each with 2 tbsp Greek-style yoghurt, a handful of pitted fresh cherries, a little honey and 1 tsp
chopped almonds.
