Salmon And Asparagus Rolls Recipe

Wrap a thin slice of smoked salmon round a spear of canned or fresh cooked asparagus. Serve as above with brown bread and butter, wedges of lemon and cayenne pepper.

Smoked trout

These can be bought already smoked, and require very little preparation. Remove the skin, make an incision down the centre and remove the fillet, then turn over and do the same. Serve with horseradish cream, wedges of lemon and rolled brown bread and butter as above.

Vegetable hors-doeuvre

Tomato juice cocktail 1

You will need:

1 can tomato juice

1 teaspoon Worcester sauce pinch sugar

1 tablespoon lemon juice salt and pepper mint leaves

1 Mix all the ingredients well together and season carefully with salt and pepper, preferably freshly ground black pepper.

2 Chill thoroughly, then serve in glasses garnished with a leaf or small sprig of mint

If you have a little more time to spare the following makes an excellent cocktail.

Tomato juice cocktail 2

You will need:

1 pint tomato juice

1 tablespoon lemon juice

1 dessertspoon freshly grated horseradish

2 teaspoons parsley, chopped

1 stick celery, chopped

1 small onion, finely chopped salt

whipped cream

1 Mix all the ingredients and chill thoroughly.

2 Strain and serve in tall glasses with 1 teaspoon whipped cream on top.

Fresh mushroom hors-d’oeuvre

1 level teaspoon chives, finely chopped

2 level teaspoons parsley, finely chopped

You will need:

8 oz. button mushrooms juice 1 lemon

3 tablespoons oil salt freshly ground black pepper

1 Rinse and dry the mushrooms, but do not peel.

2 Slice very thinly.

3 Make a dressing with the lemon juice, oil and seasoning and pour over the mushrooms.

4 Leave as long as possible before serving.

5 Sprinkle with the chives and parsley.
