Savoury Pancakes Recipe

Cooking Time: 4-5 minutes

You will need for 4 servings:

4 oz. plain flour 1 egg pinch salt 1 pint milk

1 Sift the flour and salt into a bowl.

2 Make a well in the centre, add the egg and a little of the milk, beat, adding extra milk to make a smooth thick batter. Beat again for

2-3 minutes. Cover and leave to stand for as long as possible.

3 When required, add the rest of the milk.

To cook pancakes

1 Melt a little unsalted butter in a small frying pan. There should be enough fat only to give a thin film over the bottom of the pan.

2 Pour in enough batter to give a thin layer, tilting the pan so that the bottom is evenly covered.

3 Move the pan around while the pancake is cooking and loosen it from the sides of the pan.

4 When set and lighly browned on the under side, turn with a palette knife and brown the other side. Use as required. Pancakes will keep hot in the oven or over a pan of hot water if stacked with a piece of greaseproof paper between each one.
