6 slices bread, spread with a little butter or margarine Yeast extract
100 g/4 oz/1/2 cup Cheddar cheese, sliced
3 tomatoes, sliced
300 ml/1/2 pt/l 1/2 cups milk
Salt and freshly ground black pepper
Pinch of cayenne

Make up the sandwiches using the bread, yeast extract, cheese and tomatoes »nd cut into four. Place in the base of a shallow, greased ovenproof dish. Beat together the eggs, milk, salt, pepper and cayenne and pour over the sandwiches. Sprinkle with sesame seeds. Bake in a preheated oven at 190°C/ 375°F/gas mark 5 for about 40 minutes until set and golden brown. Garnish with chopped parsley and serve with coleslaw.
