Simple Lemon Souffle Recipe
You will need for 4 servings: 1 lemon jelly 2 teaspoons lemon 1 6-oz. can evaporated juice milk thick cream (optional) chocolate buttons
1 Prepare a small (6 in. diameter) souffl6 dish by tying a band of paper round the outside of the dish. The paper should project 2 inches above the rim of the dish.
2 Dissolve the jelly in a little hot water, make up to 1 pint with cold water. Leave in a cool place until almost setting.
3 Whisk the evaporated milk, chilled if possible, adding the lemon juice and continue whisking until thick and frothy.
4 Add jelly, gradually, whisking until mixed.
5 Pour into the prepared dish and leave in a cool place until set.
6 Remove paper carefully and decorate the edge with cream and chocolate buttons.
You will need for 4 servings: small can mandarin 2 eggs oranges preserved ginger
1 orange jelly (optional)
1 Drain mandarins, saving juice. Make juice up to % pint with water.
2 Bring 1 pint of this liquid to the boil, dissolve the jelly in it. Add the remaining cold liquid.
3 Separate eggs. Beat yolks with a fork, pour on the jelly whisking with a fork or whisk. Leave in a cold place until almost setting.
4 Chop mandarins, saving a few for decoration. Whisk egg whites until stiff.
5 Lightly fold mandarins and whites into jelly.
6 Pour into a mould and leave to set.
7 Turn out and decorate with remaining mandarin oranges and slices of preserved ginger.
