Small Plain Cakes Recipe
Cooking Time: 15-20 minutes You will need:
8 oz. plain flour
2 teaspoons baking powder 1 teaspoon salt
4 oz. margarine
4 oz. sugar 3-4 oz. fruit, optional 2 eggs milk to mix
1 Grease patty tins or small paper cases.
2 Sieve flour, salt and baking powder and spice if used.
3 Rub in fat with tips of fingers until mixture looks like breadcrumbs.
4 Add sugar, and fruit if used.
5 Beat the eggs and stir into the mixture, adding a little milk if necessary to mix to a dropping consistency.
6 Bake in a moderately hot oven (400°F – Gas Mark 6) for 5 minutes. Reduce heat to moderate (350°F – Gas Mark 4) and continue cooking until well risen and golden.
